Ingredients
  

For the Crust
  • 1 cup all-purpose flour can use gluten-free all-purpose flour
  • 1 cup oats substitute with quick oats for finer texture
  • 1/2 teaspoon salt enhances flavor
  • 1/2 cup brown sugar coconut sugar can be used
  • 1/2 cup cold butter use coconut oil for vegan option
For the Filling
  • 2 cups chopped apricots can use dried apricots if needed
  • 1/4 cup honey maple syrup for vegan
  • 1 teaspoon vanilla extract provides depth of flavor
  • 2 tablespoons lemon juice freshly squeezed is best
  • 1/2 teaspoon cinnamon optional but recommended
  • 2 tablespoons water use as needed for consistency
For the Topping
  • 3/4 cup reserved crumb mixture from crust mixture

Method
 

Prepare and Bake
  1. Preheat your oven to 350°F (175°C) and line an 8x8-inch baking dish with parchment paper.
  2. In a mixing bowl, combine flour, oats, salt, and brown sugar. Cut in cold butter until crumbly.
  3. Reserve ¾ cup of the mixture for topping and press the rest into the bottom of the baking dish.
  4. Bake the crust for 15 minutes until slightly golden brown.
  5. For the filling, combine apricots, honey, vanilla, lemon juice, cinnamon, and water in a saucepan and simmer for 10-12 minutes.
  6. Spread the apricot filling over the cooled crust and crumble the reserved topping on top.
  7. Bake again for 20-25 minutes until the topping is golden brown.
  8. Let the bars cool completely before slicing into squares.
