Prepare and Bake
- Preheat your oven to 350°F (175°C) and line an 8x8-inch baking dish with parchment paper.
- In a mixing bowl, combine flour, oats, salt, and brown sugar. Cut in cold butter until crumbly.
- Reserve ¾ cup of the mixture for topping and press the rest into the bottom of the baking dish.
- Bake the crust for 15 minutes until slightly golden brown.
- For the filling, combine apricots, honey, vanilla, lemon juice, cinnamon, and water in a saucepan and simmer for 10-12 minutes.
- Spread the apricot filling over the cooled crust and crumble the reserved topping on top.
- Bake again for 20-25 minutes until the topping is golden brown.
- Let the bars cool completely before slicing into squares.
