For the Dressing

  • 2 tablespoons Vinegar or Lemon Juice Red wine vinegar or lemon juice works well.
  • 1 clove Garlic Optional, minced.
  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper
For the Herbs
  • 1/4 cup Fresh Herbs Dill, parsley, or basil.

Method
 

Preparation
  1. Wash and dry the cucumbers and tomatoes. Slice cucumbers into thin rounds and cut tomatoes into wedges.

  3. In a large mixing bowl, combine cucumbers, tomatoes, and red onion.
Dressing
  1. In a small bowl, whisk together olive oil, vinegar or lemon juice, salt, and pepper. If using garlic, let it sit in the dressing for a few minutes.
Assembly
  1. Pour the dressing over the salad and gently toss to combine, ensuring the vegetables are coated.
  2. Add the fresh herbs and toss again lightly to incorporate.
  3. Let the salad sit for about 10-15 minutes to meld flavors before serving.
