  • 1/2 cup Feta Cheese Optional, crumbled

  • 1/4 cup Nuts/Seeds Optional, such as almonds or sunflower seeds
For the Dressing
  • 2 tablespoons Lemon Juice or Balsamic Vinegar Adjust to taste
  • 1 tablespoon Honey or Maple Syrup Adjust to sweetness preference
  • 3 tablespoons Olive Oil Use high-quality extra virgin
  • 1/4 teaspoon Salt To taste
  • 1/4 teaspoon Pepper To taste

Method
 

Preparation
  1. Begin by rinsing and drying both the strawberries and cucumbers thoroughly. Hull the strawberries by removing the green stems, then slice them into quarters for ideal texture and sweetness.
  2. Next, take your cucumber, thinly slice it into rounds to achieve that refreshing crunch. Aim for even-sized pieces for a beautiful presentation.
Mix Dressing
  1. In a small mixing bowl, combine lemon juice or balsamic vinegar with honey or maple syrup depending on your sweetness preference. Drizzle in olive oil and season with salt and pepper. Whisk together for about 1 minute until emulsified.
Assemble Salad
  1. In a large bowl, gently toss in the prepared cucumber slices, strawberry quarters, and fresh herbs. If including feta cheese, crumble it in at this stage.
Toss Lightly
  1. Drizzle about half of your freshly made dressing over the cucumber and strawberry mixture. Lightly toss to combine without crushing the strawberries.
Garnish & Serve
  1. Transfer the salad into a serving dish and sprinkle toasted nuts or seeds over the top. Drizzle with remaining dressing right before serving.
