Ingredients
  

For the Salad
  • 2 medium Cucumbers peeled and sliced
  • 1 small Red Onion thinly sliced
  • 1 cup Cherry/Grape Tomatoes halved
  • 4 slices Thick-Cut Beef Bacon cooked and crumbled
  • 1 cup Sharp Cheddar Cheese shredded
  • 2 tablespoons Fresh Dill chopped
  • 2 tablespoons Chives chopped
For the Dressing
  • 1 cup Mayonnaise or vegan mayo
  • 1/2 cup Sour Cream or Greek yogurt
  • 1/2 cup Buttermilk or milk with vinegar/lemon
  • 2 tablespoons Lemon Juice
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • 1 teaspoon Dill Weed
  • 1 teaspoon Parsley Flakes
  • 1 teaspoon Dried Chives
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • 1 teaspoon Sugar to taste

Method
 

Preparation
  1. Peel and slice the cucumbers into 1/4-inch rounds. Optionally salt and let them rest for 10 minutes.
  2. Thinly slice the red onion and halve the cherry or grape tomatoes.
Make Dressing
  1. In a mixing bowl, whisk together mayonnaise, sour cream, buttermilk, and lemon juice until smooth.
  2. Add garlic powder, onion powder, dill weed, parsley flakes, dried chives, salt, pepper, and sugar. Chill for 30-60 minutes.
Cook Bacon
  1. Cook beef bacon in a skillet over medium heat for 5-7 minutes until crispy. Transfer to paper towels and crumble once cooled.
Prepare Add-ins
  1. Shred sharp cheddar cheese and chop fresh dill and chives.
Assemble Salad
  1. In a large bowl, combine cucumbers, red onion, tomatoes, crumbled bacon, and cheddar. Toss gently.
Dress and Serve
  1. Drizzle the ranch dressing over the salad and toss gently. Chill for 15-30 minutes before serving.
