Step-by-Step Instructions for Crockpot Cajun Butter Chicken
- Layer 2 lbs of boneless, skinless chicken breasts at the bottom of your slow cooker. Evenly sprinkle 2 tablespoons of Cajun seasoning over the chicken and pour in ½ cup of chicken broth.
- Cut ½ cup of unsalted butter into small cubes and distribute them evenly over the chicken. Cover and set on LOW for 4 hours or HIGH for 2-3 hours.
- Shred the chicken directly in the slow cooker using two forks to allow it to soak up the flavorful sauce.
- In a small bowl, whisk 1 tablespoon of cornstarch with 1 tablespoon of cold water until smooth. Stir this into the shredded chicken and add ½ cup of heavy cream.
- Prepare 1 cup of long grain white rice according to package instructions, rinsing beforehand.
- Spoon rice onto each plate and ladle the chicken and sauce over the rice. Garnish with parsley, pepper, and paprika flakes.
