  • 3 medium Zucchini Grated, excess moisture removed
  • 2 large Eggs Acts as a binder
  • 1 cup Oat Flour or Almond Flour Gluten-free substitutes available
  • 1/4 cup Grated Parmesan Cheese Optional
  • 1/2 cup Plain Greek Yogurt or Cottage Cheese Can use plant-based yogurt
  • 2 cloves Garlic Minced
  • 1 teaspoon Sea Salt
  • 1/2 teaspoon Black Pepper
  • 1 teaspoon Dried Oregano or Thyme
  • 1/4 cup Chopped Fresh Parsley or Dill Or other herbs of choice
  • 2 tablespoons Olive Oil For cooking

Method
 

Cooking Instructions
  1. Grate three medium zucchinis and squeeze out excess moisture using a kitchen towel.
  2. In a large bowl, mix grated zucchini with two eggs, one cup of oat or almond flour, minced garlic, and seasonings.
  3. Preheat a non-stick skillet over medium heat for 3 minutes and add olive oil.
  4. Scoop about 2 tablespoons of the mixture, flatten it, and place it into the skillet.
  5. Cook for 3-4 minutes until golden and crispy, then flip and cook the other side for 2-3 minutes.
  6. Drain cooked fritters on paper towels to absorb excess oil.
  7. Serve warm with yogurt dip or fresh herbs.
