- Grate three medium zucchinis and squeeze out excess moisture using a kitchen towel.
- In a large bowl, mix grated zucchini with two eggs, one cup of oat or almond flour, minced garlic, and seasonings.
- Preheat a non-stick skillet over medium heat for 3 minutes and add olive oil.
- Scoop about 2 tablespoons of the mixture, flatten it, and place it into the skillet.
- Cook for 3-4 minutes until golden and crispy, then flip and cook the other side for 2-3 minutes.
