Preparation
- In a medium mixing bowl, combine cream cheese, shredded cheddar cheese, and diced jalapeños. Add cooked bacon if using, and mix until smooth.
- Lay an egg roll wrapper flat, spoon 2 tablespoons of filling into the center, fold and roll tightly, sealing edges with water.
- Heat oil in a deep pan to 350°F (175°C), checking with a thermometer.
- Carefully add 3-4 egg rolls to the hot oil, frying for 3-4 minutes per side until golden brown.
- Remove egg rolls with a slotted spoon and drain on a paper towel-lined plate.
- Serve hot with dipping sauces.
