Method
 

Step-by-Step Instructions
  1. Preheat your oven to 425°F (220°C) and line a baking tray with parchment paper.
  2. Boil whole, unpeeled carrots in salted water until fork-tender, about 10–12 minutes. Drain and let cool.
  3. Smash each carrot gently to flatten to about half an inch thick and place on the baking tray.
  4. Drizzle with olive oil and sprinkle garlic powder, smoked paprika, salt, pepper, and Parmesan cheese.
  5. Roast in the oven for 20–25 minutes, flipping halfway through to ensure even browning.
  6. Remove from oven, cool slightly, and serve garnished with fresh herbs if desired.
