Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
  2. Wash the baby potatoes thoroughly and halve each potato. Toss them in olive oil, salt, pepper, paprika, and herbs until coated.
  3. Spread the potatoes in a single layer on the baking sheet, cut side down.
  4. Crumble or cut the feta cheese and scatter across the baking sheet with whole garlic cloves among the potatoes.
  5. Roast in the oven for 30 to 40 minutes, tossing halfway through, until the potatoes are golden brown and crispy.
  6. Remove from oven, let cool slightly, and serve in a bowl drizzled with more olive oil if desired.
