- Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
- Wash the baby potatoes thoroughly and halve each potato. Toss them in olive oil, salt, pepper, paprika, and herbs until coated.
- Spread the potatoes in a single layer on the baking sheet, cut side down.
- Crumble or cut the feta cheese and scatter across the baking sheet with whole garlic cloves among the potatoes.
- Roast in the oven for 30 to 40 minutes, tossing halfway through, until the potatoes are golden brown and crispy.
- Remove from oven, let cool slightly, and serve in a bowl drizzled with more olive oil if desired.
