Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) and the mini waffle maker.
  2. In a mixing bowl, whisk together the egg, almond flour, shredded mozzarella, grated Parmesan, Italian seasoning, and garlic powder.
  3. Sprinkle a small amount of mozzarella in the waffle maker, pour half the batter, top with more cheese, and cook for 3-5 minutes.
  4. Carefully remove the chaffle and let it cool on a rack.
  5. Repeat the cooking process with the remaining batter.
Assembly
  1. Top each chaffle with low-carb pizza sauce, cheese, and your favorite toppings.
  2. Place on a baking sheet and bake for 3-4 minutes until cheese is melted, optionally broil for an additional 1-2 minutes.
  3. Let the chaffles cool slightly before serving.
