Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Roll out thawed puff pastry sheets on a lightly floured surface to about 1/8 inch thick.
  3. Cut the rolled pastry into 8 equal squares.
  4. Whisk together 1 beaten egg and a splash of milk to create an egg wash.
  5. Lay a slice of ham in the center of each pastry square and layer cheese on top.
  6. Sprinkle salt and pepper over the cheese; add herbs if desired.
  7. Place another pastry square on top and crimp the edges to seal.
  8. Brush the tops of each stack with the egg wash.
  9. Arrange the pastry stacks on the prepared baking sheet.
  10. Bake in the oven for 20–25 minutes until golden brown.
  11. Let them cool slightly before serving.
