- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Roll out thawed puff pastry sheets on a lightly floured surface to about 1/8 inch thick.
- Cut the rolled pastry into 8 equal squares.
- Whisk together 1 beaten egg and a splash of milk to create an egg wash.
- Lay a slice of ham in the center of each pastry square and layer cheese on top.
- Sprinkle salt and pepper over the cheese; add herbs if desired.
- Place another pastry square on top and crimp the edges to seal.
- Brush the tops of each stack with the egg wash.
- Arrange the pastry stacks on the prepared baking sheet.
- Bake in the oven for 20–25 minutes until golden brown.
- Let them cool slightly before serving.
