Bang Bang Sauce
  • 1/2 cup mayonnaise substitute with Greek yogurt for a lighter option
  • 1/4 cup Thai Sweet Chili Sauce provides sweetness and hints of spice
  • 1-2 tablespoons Sriracha Sauce increase for a spicier finish
  • 1 tablespoon honey maple syrup works as a vegan substitute
Chicken
  • 1 pound boneless skinless chicken tenderloins can be swapped with shrimp, tofu, or cauliflower
  • 1 cup buttermilk regular milk mixed with lemon juice can be a substitute
  • 1 cup all-purpose flour gluten-free flour can be used
  • 1/4 cup cornstarch omit for less crunch
  • 1 large egg or a flax egg for a vegan option
Seasoning
  • 1 teaspoon garlic powder adjust quantity according to taste

Method
 

Preparation
  1. In a small bowl, mix together mayonnaise, Thai sweet chili sauce, Sriracha, and honey until smooth and well combined. Set aside.
  2. In a large bowl, whisk together buttermilk, all-purpose flour, cornstarch, egg, Sriracha, garlic powder, salt, black pepper, and optional cayenne. Add chicken and let marinate for 10 minutes.
  3. Spread panko breadcrumbs on a plate. Remove chicken from marinade, allowing excess to drip off, and coat in breadcrumbs.
  4. Heat canola oil in a skillet over medium-high heat until 365°F. Fry chicken for 2-3 minutes per side until golden brown.
  5. Transfer chicken to a paper towel-lined plate to drain oil. Toss in prepared Bang Bang Sauce while hot.
  6. Sprinkle with parsley and serve warm.
