- In a small bowl, mix together mayonnaise, Thai sweet chili sauce, Sriracha, and honey until smooth and well combined. Set aside.
- In a large bowl, whisk together buttermilk, all-purpose flour, cornstarch, egg, Sriracha, garlic powder, salt, black pepper, and optional cayenne. Add chicken and let marinate for 10 minutes.
- Spread panko breadcrumbs on a plate. Remove chicken from marinade, allowing excess to drip off, and coat in breadcrumbs.
- Heat canola oil in a skillet over medium-high heat until 365°F. Fry chicken for 2-3 minutes per side until golden brown.
- Transfer chicken to a paper towel-lined plate to drain oil. Toss in prepared Bang Bang Sauce while hot.
- Sprinkle with parsley and serve warm.
