Step-by-Step Instructions
  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Wash and dry the baby potatoes thoroughly, then cut each in half.
  3. Chop the bacon into small, bite-sized pieces.
  4. In a large mixing bowl, toss the halved potatoes with olive oil, garlic powder, smoked paprika, salt, and black pepper.
  5. Transfer the seasoned potatoes onto the prepared baking sheet in a single layer.
  6. Evenly sprinkle the chopped bacon over the seasoned potatoes.
  7. Roast for 30-35 minutes, flipping at the halfway mark.
  8. In the last 5 minutes, drizzle honey over the potatoes.
  9. Remove from the oven, let cool slightly, and garnish with fresh parsley before serving.
