Cooking Steps
  1. Heat 2 tablespoons of vegetable oil in a large pot over medium heat. Add one diced onion, two minced garlic cloves, and a tablespoon of grated ginger. Sauté for 3-4 minutes until translucent.
  2. Pour in 4 cups of broth and one can of coconut milk. Stir well and bring to a gentle simmer.
  3. Stir in 2 tablespoons of red curry paste, 2 tablespoons of soy sauce, and the juice of one lime. Simmer for about 5 minutes.
  4. Add your choice of frozen or fresh dumplings directly into the broth and cook until they float, about 5-7 minutes.
  5. Gently stir in 2 cups of fresh spinach or bok choy, and let wilt for 2-3 minutes.
  6. Taste and adjust seasoning if needed. Ladle into bowls, garnishing with fresh cilantro and lime wedges. Serve warm.
