Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C). Grease a 9x13-inch baking dish and set it aside.
  2. Wash and peel the sweet potatoes, then slice them thinly (about 1/8 inch thick) using a knife or mandolin.
  3. Melt unsalted butter in a medium saucepan over medium-high heat. Add minced garlic and chopped shallots, sauté for about 2-3 minutes.
  4. Stir in fresh thyme, kosher salt, and black pepper, then pour in heavy cream and add shredded parmesan cheese. Mix until smooth and creamy.
  5. Pour the cream mixture over the sliced sweet potatoes in a bowl. Toss to coat, then place slices upright in the greased baking dish.
  6. Bake in the preheated oven for 50-60 minutes until tender and bubbling.
  7. Broil for an additional 2-3 minutes for a golden top, keeping a close watch.
  8. Allow to cool for a few minutes before serving, garnished with fresh thyme.
