Step-by-Step Instructions
  1. Gather your ingredients for the Creamy Pumpkin Gnocchi. Chop the spinach finely, dice the onion, and mince the garlic cloves.
  2. Bring a large pot of salted water to a rapid boil. Carefully add the store-bought gnocchi and cook them for 2-3 minutes, or until they float to the surface. Drain the gnocchi and reserve about ½ cup of the pasta water.
  3. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the diced onion and sauté for 5-7 minutes until it becomes translucent. Add minced garlic and cook for an additional minute.
