  • ½ cup White Wine Can substitute with chicken or vegetable broth.
  • 1 cup Heavy Whipping Cream Coconut cream for dairy-free option.
  • 4 ounces Cream Cheese Mascarpone is a good alternative.
  • ½ cup Grated Parmesan Cheese Nutritional yeast for vegan option.
  • to taste Salt
  • to taste Black Pepper
  • ¼ cup Chopped Fresh Parsley Basil can be used instead.

Method
 

Cooking Steps
  1. Bring a large pot of salted water to a boil. Cook tagliatelle according to package instructions, about 8-10 minutes, until al dente. Reserve 1 cup of pasta water, drain pasta, set aside.
  2. In a large skillet over medium heat, add olive oil. Sauté diced onion and sliced mushrooms for 5 minutes, until softened.
  3. Add minced garlic and sauté for 1 minute until fragrant.
  4. Pour in white wine, deglaze skillet, and simmer for 3-4 minutes until wine evaporates.
  5. Reduce heat to low, add heavy cream and cream cheese. Simmer for about 5 minutes until thickened.
  6. Add drained tagliatelle to skillet, toss to coat with sauce. Mix in half of the grated Parmesan cheese. Adjust sauce consistency with reserved pasta water.
  7. Season with salt and black pepper. Serve topped with remaining Parmesan and parsley.
