  • 1.5 cups chicken broth or vegetable broth for a vegetarian option.
For the Tortellini
  • 1 lb cheese tortellini frozen tortellini can be used.
  • 1 cup mozzarella cheese shredded, can substitute with other melty cheeses.
  • 0.5 cup heavy cream can replace with half-and-half or milk.
For the Finish
  • 2 cups baby spinach can substitute with kale or any leafy greens.
  • 0.33 cup Parmesan cheese grated, nutritional yeast can be used for vegan option.

Method
 

Step-by-Step Instructions
  1. Spray the inside of your slow cooker with olive oil to prevent sticking.
  2. Place the chicken breasts in a single layer at the bottom of the slow cooker.
  3. Pour the marinara sauce over the chicken and sprinkle with garlic powder, onion granules, Italian seasoning, paprika, and red chili flakes.
  4. Cover the slow cooker and set it to LOW for 4 hours.
  5. Once cooking is complete, shred the chicken directly in the slow cooker.
  6. Add the cheese tortellini, shredded mozzarella, and heavy cream, then cover and cook on LOW for another 30 minutes.
  7. Stir in the baby spinach and cover for 10 minutes to wilt.
  8. Mix in the grated Parmesan cheese before serving.

Notes
