  • 1 can Diced Tomatoes canned for convenience
For Creaminess
  • 1 cup Heavy Cream or half and half
  • 2 tbsp Butter unsalted or salted

  • 1 tbsp Oil olive, canola, or avocado

  • 1 cup Corn fresh or frozen

  • 1 cup Mozzarella Cheese grated

Method
 

Step-by-Step Instructions
  1. Prep Chicken: Season the chicken breasts with salt, pepper, and honey. Let marinate for 10 minutes.
  2. Sauté Chicken: Heat oil and butter in a skillet over medium-high heat. Cook chicken for 6-7 minutes each side until golden brown. Remove and rest.
  3. Cook Onions and Garlic: In the same skillet, cook onion for 5-7 minutes, add garlic for an additional minute. Mix in tomatoes, chipotle, and seasonings. Simmer for 10 minutes.
  4. Cook Fettuccine: Boil salted water, cook fettuccine for 8-10 minutes until al dente. Reserve a cup of pasta water.
  5. Combine & Simmer: Add chicken and corn to skillet, pour in heavy cream, and fold in cheeses. Simmer for another 5 minutes.
  6. Toss Pasta: Add fettuccine to sauce, toss gently to mix. Adjust thickness with reserved pasta water. Serve garnished with parsley.
