  1. In a large pot, heat 2 tablespoons of vegetable oil over medium heat. Once shimmering, add sliced sausage and sauté for 3-4 minutes until browned. Remove and set aside.
  2. Add diced onion, chopped celery, and red bell pepper to the pot. Stir frequently for 5-8 minutes until softened. Then add minced garlic, stirring for an additional minute.
