Step-by-Step Instructions for Pumpkin & Gouda Stuffed Shells with Brown Butter & Sage Alfredo Sauce
  1. Preheat your oven to 375°F (190°C) and grease a baking dish with olive oil or butter.
  2. Bring a large pot of salted water to a boil, add pasta shells and cook until al dente, about 8-10 minutes.
  3. In a bowl, combine pumpkin puree, Gouda, ricotta, Parmesan, garlic powder, nutmeg, sage, olive oil, salt, and pepper until smooth.
  4. Stuff each pasta shell with the mixture and place them in the greased baking dish.
  5. In a saucepan, melt butter over medium heat until golden brown, then stir in heavy cream and remaining sage, and thicken for 3-4 minutes.
  6. Pour the Alfredo sauce over the stuffed shells, coating them evenly.
  7. Cover with foil and bake for 20 minutes, uncover and bake for another 10-15 minutes until golden brown.
