  • 2 cloves garlic minced

  • 1 can coconut milk full-fat for richness
  • 3 cups water or broth chicken or vegetable broth for flavor
  • 2 cups shredded rotisserie chicken or leftover/poached chicken
  • 2 bundles ramen noodles discard seasoning packet
For the Spice Blend
  • 1 teaspoon turmeric or curry powder
  • 1 teaspoon sweet paprika or smoked paprika
  • hot sauce to taste

Method
 

Step-by-Step Instructions
  1. Pre-Boil Carrots: Bring a small pot of water to a boil. Add carrot pieces and simmer for 3-5 minutes. Drain and set aside.
  2. Sauté Aromatics: Heat coconut oil in a large pan over medium heat. Add chopped red onion and sauté for 4-5 minutes until translucent.
  3. Add Garlic: Once onions are softened, add minced garlic and cook for another minute until golden.
  4. Mix in Chicken and Peppers: Add shredded chicken and chopped red bell pepper, along with turmeric and sweet paprika. Stir for 2-3 minutes.
  5. Incorporate Carrots and Hot Sauce: Add the pre-boiled carrots and a splash of hot sauce. Stir and cook for another minute.
  6. Add Coconut Milk and Broth: Pour in coconut milk and water/broth. Stir and bring to a gentle simmer.
  7. Cook Ramen Noodles: Add ramen noodles and cook for 2-3 minutes until tender.
  8. Serve and Garnish: Ladle soup into bowls and garnish with fresh cilantro and lime juice.
