Step-by-Step Instructions
  1. In a medium bowl, combine 1 can of drained tuna with 1 cup of cottage cheese using a fork until well blended.
  2. Add 1 beaten egg, 2 chopped green onions, a handful of parsley if using, 1 teaspoon of garlic powder, and a pinch of salt and black pepper to the bowl. Mix until evenly distributed.
  3. Gradually mix in 1 cup of panko breadcrumbs until the mixture thickens and holds together.
  4. Scoop out portions of the mixture and shape them into patties, about 2½ inches in diameter.
  5. Heat a skillet over medium heat and add 2 tablespoons of olive oil until shimmering.
  6. Carefully place the patties in the skillet and cook for about 3-4 minutes on each side until golden brown and crispy.
