Ingredients
  

For the Pasta
  • 8 ounces bow tie pasta any short pasta works well
  • 1 cup corn kernels fresh corn is best, canned or frozen will do
For the Salad
  • 1 cup cherry tomatoes halved
  • 0.5 medium red onion finely chopped or sliced
  • 0.5 cup cilantro use both leaves and stems
  • 1 large avocado add as much as desired
For the Dressing
  • 1 cup plain Greek yogurt opt for 0% fat for a lighter taste
  • 2 tablespoons fresh lime juice essential for flavor
  • 2 cloves garlic cloves whole cloves
  • 1 teaspoon salt adjust to taste
  • 0.25 teaspoon cayenne adjust to taste

Method
 

Dressing Preparation
  1. In a food processor, combine plain Greek yogurt, fresh lime juice, roughly chopped cilantro, garlic cloves, salt, and a pinch of cayenne. Blend until smooth and creamy, about 30 seconds.
  2. Taste your dressing; adjust seasoning if desired, and then transfer to a bowl. Cover and refrigerate for at least 20 minutes.
Pasta Preparation
  1. Bring a large pot of salted water to a boil. Add the bow tie pasta and cook according to package instructions, usually around 8–10 minutes, until al dente. Drain the pasta and rinse under cold water.
Corn Preparation
  1. If using fresh corn, bring a medium pot of water to a boil. Add the corn cobs and boil for 1.5 to 2 minutes. Remove from the water and let cool.
  2. For canned or frozen corn, simply drain well, ensuring excess moisture is removed.
Combining Ingredients
  1. In a large mixing bowl, combine the cooled pasta, corn, halved cherry tomatoes, finely chopped red onion, and remaining chopped cilantro. Gently fold the ingredients together.
  2. Pour in the desired amount of dressing and toss well until everything is coated.
Serving
  1. To serve, gently fold in diced avocado. Serve immediately or let chill for another 15 minutes to enhance flavors.
