- Preheat your oven to 350°F (175°C). Prepare a foil-lined baking sheet.
- Season the chicken thighs generously with salt, pepper, and Italian seasoning.
- In a large skillet, heat 1-2 tablespoons of oil and brown the chicken thighs skin-side down for about 5 minutes.
- Transfer the browned thighs to the baking sheet, skin-side up, and bake for approximately 20 minutes.
- Sauté the sliced white mushrooms in the same skillet over medium heat for about 5 minutes.
- Add chopped bacon to the skillet and cook until crispy, then stir in the heavy cream and dried thyme.
- Once baked, return the chicken to the skillet and spoon the sauce over them. Let simmer briefly before serving.
