  • 1 cup orzo pasta can be replaced with acini di pepe or couscous
  • 2 cups broccoli florets fresh or frozen
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 4 cups chicken broth low-sodium recommended
  • 2 tablespoons olive oil or any neutral cooking oil
  • 1 tablespoon Italian seasoning or fresh herbs

For the Creamy Finish
  • ½ cup Parmesan cheese grated
  • to taste fresh parsley for garnishing

Step-by-Step Instructions
  1. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add 1 diced onion and sauté for 3–4 minutes until translucent.
  2. Add 8 ounces of sliced chicken sausage and cook for 5–7 minutes until browned.
  3. Stir in 3 minced garlic cloves and sauté for about 1 minute until fragrant.
  4. Pour in 4 cups of chicken broth, bring to a gentle boil, and stir in 1 cup of orzo and 1 tablespoon of Italian seasoning.
  5. Reduce heat to low, cover, and simmer for 10 minutes.
  6. Remove lid and add 2 cups of broccoli florets. Cover and cook for another 5 minutes.
  7. Season with salt and pepper to taste, and stir in ½ cup grated Parmesan cheese until melted.
  8. Serve warm, garnished with fresh parsley.
