- In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add 1 diced onion and sauté for 3–4 minutes until translucent.
- Add 8 ounces of sliced chicken sausage and cook for 5–7 minutes until browned.
- Stir in 3 minced garlic cloves and sauté for about 1 minute until fragrant.
- Pour in 4 cups of chicken broth, bring to a gentle boil, and stir in 1 cup of orzo and 1 tablespoon of Italian seasoning.
- Reduce heat to low, cover, and simmer for 10 minutes.
- Remove lid and add 2 cups of broccoli florets. Cover and cook for another 5 minutes.
- Season with salt and pepper to taste, and stir in ½ cup grated Parmesan cheese until melted.
- Serve warm, garnished with fresh parsley.
