Step-by-Step Instructions
  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Shred 2 medium zucchinis, then squeeze out excess moisture.
  3. In a large bowl, combine zucchini with eggs, mozzarella, Parmesan, garlic powder, Italian seasoning, salt, and pepper. Mix until well blended.
  4. Spread the mixture onto the baking sheet, shaping it into a rectangle about ¼-inch thick. Bake for 20–25 minutes or until golden brown.
  5. Sprinkle the remaining mozzarella over the base and bake for an additional 5–7 minutes until melted and bubbly.
  6. Let cool for 5 minutes before slicing into breadsticks and serving warm with marinara or ranch.
