- Lay your low-carb tortillas flat and spread 2 tablespoons of marinara sauce on each, leaving a half-inch border.
- Sprinkle a generous layer of freshly shredded mozzarella cheese over the sauce on each tortilla.
- Arrange the pepperoni slices on top of the cheese, overlapping slightly.
- Roll each tortilla tightly, brush with olive oil, and place seam-side down on a baking sheet lined with parchment paper.
