For the Chicken
  • 2 lbs boneless skinless chicken breast
For the Sauce
  • 1 tablespoon olive oil for browning the chicken
  • 8 oz cream cheese softened
  • ½ cup heavy cream or coconut cream as a substitute
  • 1 teaspoon garlic powder or fresh minced garlic
  • 1 teaspoon onion powder or fresh onions
  • ½ teaspoon salt adjust per taste
  • ¼ teaspoon black pepper adjust per taste
For the Veggies
  • 4 cups broccoli florets fresh or frozen (thawed)
For the Topping
  • 2 cups shredded cheddar cheese sharp or mild
  • 6 slices bacon cooked and crumbled

Method
 

Directions
  1. Preheat the oven to 375°F (190°C) and grease a 9x13 inch baking dish.
  2. Heat olive oil in a large skillet over medium-high heat, then sauté cubed chicken until golden brown and cooked through for 6-8 minutes.
  3. Reduce heat to low, add cream cheese, heavy cream, garlic powder, onion powder, salt, and pepper. Stir until smooth.
  4. Fold in broccoli florets and crumbled bacon until well coated.
  5. Transfer mixture to the greased baking dish and sprinkle cheddar cheese on top.
  6. Bake for 20-25 minutes until bubbly and cheese is golden brown.
  7. Let it rest for about 5 minutes before serving.
