  2. In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Season the chicken breasts with Cajun seasoning, salt, and pepper. Cook the chicken in the skillet for about 6-7 minutes until browned and cooked through.
  3. Reduce heat and add 1 tablespoon of butter. Sauté the minced garlic for 1-2 minutes, then add chicken broth and heavy cream, stirring to combine. Simmer for 3-4 minutes until slightly thickened.
  4. Return the cooked rotini and chicken to the skillet, mixing until well-coated with sauce. Gradually add mozzarella, parmesan, and cheddar cheese, allowing them to melt into the mixture.
