- Preheat your oven to 400°F (200°C) and line baking sheets with parchment paper.
- Roll out the puff pastry on a floured surface to about 1/8 inch thick. Cut into 4-5 inch squares and transfer onto prepared baking sheets.
- In a large skillet over medium heat, warm 2 tablespoons of olive oil. Add sliced onions, stirring for 15-20 minutes until golden brown.
- Stir in 1 tablespoon of balsamic vinegar, along with salt and pepper to taste. Cook for an additional 2-3 minutes.
- Spoon the caramelized onion mixture onto each puff pastry square, then top with crumbled goat cheese.
- Bake the tarts in the preheated oven for 15-20 minutes until golden and puffed.
- Garnish with fresh thyme leaves and serve warm.
