Preparation
  1. In a mixing bowl, combine warm water, sugar, and active dry yeast. Allow to sit for about 5 minutes until frothy.
  2. In a separate bowl, whisk together flour and salt. Pour the yeast mixture into the flour with olive oil.
  3. Knead the dough for 8 to 10 minutes until smooth and elastic.
  4. Form the dough into a ball, place it in an oiled bowl, cover, and let it rise for 1 to 1.5 hours.
  5. Combine ricotta, mozzarella, Parmesan, lemon zest, and lemon juice in a bowl until smooth.
  6. Preheat the oven to 475°F (245°C) and prepare a pizza stone or baking sheet.
  7. After the dough rises, punch it down, roll it out into a 12-inch round.
  8. Transfer dough to parchment paper, spread the cheese mixture, and sprinkle with thyme.
  9. Bake for 10 to 12 minutes until the crust is golden and cheese is bubbly.
  10. Drizzle with olive oil and honey, sprinkle with red pepper flakes before serving.
