- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Dry the salmon fillets with a paper towel, place them skin-side down on the baking sheet. Drizzle olive oil and season with salt and black pepper.
- In a saucepan, combine diced peaches, bourbon, brown sugar, soy sauce, Dijon mustard, minced garlic, lemon juice, smoked paprika, and red pepper flakes. Simmer for 5–7 minutes, mashing some peaches.
- Generously spoon the glaze over each salmon fillet. Reserve some glaze for later.
- Bake the salmon for 12–15 minutes until it flakes easily. Broil for 1–2 minutes for added caramelization.
- Remove from the oven, drizzle reserved glaze, and garnish with parsley, peach slices, and lemon wedges before serving.
