  • 1/4 cup Cilantro chopped
For the Crunch
  • 2 cups Chili Cheese Fritos or tortilla strips
For the Dressing
  • 1 cup Sour Cream or Greek yogurt
  • 1/2 cup Mayonnaise or vegan mayo
  • 2 tablespoons Chipotle Sauce adjust for heat
  • 1 tablespoon Lime Juice freshly squeezed

Step-by-Step Instructions
  1. In a large mixing bowl, combine the coleslaw mix, black beans, well-drained corn, finely chopped red bell pepper, diced jalapeño (if using), sliced green onions, and chopped cilantro. Gently toss for 1-2 minutes until well distributed.
  2. In a separate bowl, whisk together sour cream, mayonnaise, chipotle sauce, and lime juice. Season with salt and pepper to taste. Whisk until smooth and creamy.
  3. Drizzle the dressing over the salad base and use a large spoon to gently toss everything together, making sure all ingredients are coated evenly.
  4. Just before serving, add the Chili Cheese Fritos to the salad, gently folding them in to maintain their crunch.
