- Preheat your oven to 350°F (175°C) and spray a 13 x 9 inch baking dish with cooking spray.
- In a medium pot over medium heat, brown the ground pork sausage for 5–7 minutes, then transfer to the baking dish, blotting excess grease.
- Melt 4 tablespoons of butter in the sausage drippings, then add 1/4 cup of flour, salt, and pepper. Stir continuously for 2-3 minutes to form a roux.
- Gradually whisk in 2 cups of milk into the roux, stirring for about 5-7 minutes until thickened.
- Pour the thickened gravy over the browned sausage in the baking dish, ensuring it's evenly spread.
- Cut each biscuit into quarters and place them evenly over the gravy.
- Bake the casserole for 25–30 minutes until biscuits are golden brown.
