  1. Season the beef chuck generously with salt and pepper. Sear in a skillet over medium-high for about 5 minutes until browned on all sides. Transfer to the slow cooker.
  2. In the slow cooker, add the sliced onions, minced garlic, and grated ginger. Pour in the beef broth, water, soy sauce, sesame oil, and sprinkle in the brown sugar. Stir well.
  3. Cover and set the slow cooker to low heat and simmer for 8 hours or high heat for 4 hours until beef is tender.
