  • 2 cups cooked chicken shredded or rotisserie chicken
  • 8 oz cream cheese softened for easier mixing
  • 1 cup shredded cheddar cheese or any melty cheese
  • 1/2 cup salsa fresh or jarred
  • 1 tsp garlic powder or 1 clove minced fresh garlic
  • 1 tsp onion powder or finely chopped fresh onion
  • 1 tsp cumin optional for flavor

For the Taquitos
  • 10-12 flour or corn tortillas warm to prevent cracking
  • 2 tbsp cooking spray or olive oil for greasing and brushing

Method
 

Preparation
  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper or grease with cooking spray.
  2. In a mixing bowl, combine cooked chicken, cream cheese, cheddar cheese, salsa, garlic powder, onion powder, cumin, salt, and pepper; mix until creamy.
  3. Warm tortillas in the microwave for 20-30 seconds. Place 2-3 tablespoons of filling on each tortilla, roll tightly, and place seam-side down on the baking sheet.
  4. Lightly brush or spray the tops with olive oil. Bake for 15-18 minutes or until golden brown and crispy.
  5. Remove from oven, let cool for a few minutes, and serve hot with salsa, sour cream, or guacamole.
