Preparation
- Preheat your oven to 200°C (400°F). Gather butternut squash and Brussels sprouts.
- Toss cubed butternut squash with olive oil, salt, and pepper. Spread on a baking sheet and roast for 15-20 minutes.
- Prepare Brussels sprouts by halving and tossing with olive oil, salt, and pepper. Add to the oven after the squash has roasted for 10 minutes.
- Bring a large pot of salted water to a boil. Cook bow tie pasta according to package directions for 8-10 minutes.
- In a large skillet, heat olive oil and sauté sliced smoked sausage for 5-7 minutes until browned.
- In the same skillet, heat minced garlic for 1-2 minutes and add butter until melted.
- Combine the cooked sausage with roasted squash, Brussels sprouts, and pasta. Toss with thyme and smoked paprika.
- Taste and adjust seasoning with salt and pepper before serving.
