  • 1 medium Butternut Squash Cubed
  • 2 cups Brussels Sprouts Halved
For the Pasta
  • 8 ounces Bow Tie Pasta Or any pasta shape
For the Sausage
  • 12 ounces Smoked Sausage Sliced
For the Sauce
  • 2 tablespoons Olive Oil For roasting
  • 2 tablespoons Butter Or vegan butter
  • 3 cloves Garlic Minced
  • 1 teaspoon Smoked Paprika Or regular paprika with cayenne
  • 1 tablespoon Fresh Thyme Or dried thyme

Method
 

Preparation
  1. Preheat your oven to 200°C (400°F). Gather butternut squash and Brussels sprouts.
  2. Toss cubed butternut squash with olive oil, salt, and pepper. Spread on a baking sheet and roast for 15-20 minutes.
  3. Prepare Brussels sprouts by halving and tossing with olive oil, salt, and pepper. Add to the oven after the squash has roasted for 10 minutes.
  4. Bring a large pot of salted water to a boil. Cook bow tie pasta according to package directions for 8-10 minutes.
  5. In a large skillet, heat olive oil and sauté sliced smoked sausage for 5-7 minutes until browned.
  6. In the same skillet, heat minced garlic for 1-2 minutes and add butter until melted.
  7. Combine the cooked sausage with roasted squash, Brussels sprouts, and pasta. Toss with thyme and smoked paprika.
  8. Taste and adjust seasoning with salt and pepper before serving.
