Preparation
- Blend the soy yogurt, apple butter, Medjool dates, miso paste, cinnamon, cardamom, and soy milk in a blender until smooth and creamy.
- In a medium storage container, whisk together chia seeds and the blended milk mixture. Allow to sit for 5 minutes, whisk again, then refrigerate for at least 1 hour.
- Pulse oats, walnuts, Medjool dates, and a pinch of salt in a mini food processor until crumbly.
- Sauté diced apples with water, maple syrup, and cinnamon in a medium skillet over medium heat for about 3-4 minutes until apples soften.
- Spoon the chia pudding into serving bowls and top with warm sautéed apples and crumble mixture. Drizzle with apple butter and maple syrup if desired.
