Ingredients
  

For the Chia Pudding
  • 1/2 cup Chia Seeds Blend if you prefer a smoother consistency.
  • 2 tablespoons Miso Paste Yellow or white miso preferred; can omit.
  • 4 pieces Medjool Dates Substitute with dried apricots if desired.
  • 1 teaspoon Cinnamon Can use apple pie spice as a substitute.
  • 1 teaspoon Cardamom Optional spice for flavor.
  • 1 cup Soy Milk Can substitute with other plant-based milk.
  • 1/2 cup Soy Yogurt Other plant-based yogurt can be used.
For the Crumble
  • 1 cup Oats Ensure oats are certified gluten-free for gluten-free option.
  • 1/2 cup Walnuts Can substitute with almonds or pecans.
For the Apples
  • 2 cups Apples Fresh diced apples; bananas can be used instead.
  • 1/2 cup Apple Butter Can substitute with sautéed apples.

Method
 

Preparation
  1. Blend the soy yogurt, apple butter, Medjool dates, miso paste, cinnamon, cardamom, and soy milk in a blender until smooth and creamy.
  2. In a medium storage container, whisk together chia seeds and the blended milk mixture. Allow to sit for 5 minutes, whisk again, then refrigerate for at least 1 hour.
  3. Pulse oats, walnuts, Medjool dates, and a pinch of salt in a mini food processor until crumbly.
  4. Sauté diced apples with water, maple syrup, and cinnamon in a medium skillet over medium heat for about 3-4 minutes until apples soften.
  5. Spoon the chia pudding into serving bowls and top with warm sautéed apples and crumble mixture. Drizzle with apple butter and maple syrup if desired.
